Sally Singh is known along the East Bank Demerara for her ability to bake exquisite cakes for birthdays, anniversaries, weddings and other occasions.
Her love of baking and bringing families together has seen her expand her skill set from baking Guyana Black Cake to baking beautiful wedding cakes and birthday cakes, with those for children sometimes featuring popular cartoon characters.
The Herstelling resident told Stabroek News that she honed her skills at the First Choice baking operation on D’Urban Street under the tutelage of the late Debbie Mentore. It was there that she learnt to appreciate the unique flavour that locally grown fruits can add to a dish.
“It meant something to observe the fruits growing on the five-finger trees. To see the fruits becoming yellow; knowing too well that the fruits would soon be processed and ready to be part of a wonderful fruit cake to be consumed in Guyanese form,” she said. She also now understands how fruit cut into an appropriate size and added to a dish enhances it. “To see them made into sauce, and finally to see them dried and ground small is inspiring to say the least,” she said. While Sally is proud of the certificate she earned at the end of the six-week course, she feels privileged to have benefited from Mentore’s patience and interest in ensuring that she and her classmates mastered the baking techniques. She remains saddened at Mentore’s passing.
