Thyme (Thymus vulgaris) commonly called fine-leaf thyme and its cousin Spanish thyme originated from the Mediterranean and are used in many Caribbean dishes.
This herb has adjusted well to the Caribbean. It is a somewhat small, woody shrub with small green leaves, bearing small white flowers with yellowish centres and a fragrant smell.
Fine-leaf thyme can be used as an ornamental plant as it forms a miniature hedge. However, it can also be planted in a pot or a garden bed in full sun. Just remember that it likes well-drained sandy soil. It can be propagated by seeds or cuttings. Fertilize with Miracle Gro All Purpose Plant Food once every 2 weeks.
This fresh herb is used to flavour food (soups, stews, salads, meats etc). Can you imagine garlic pork without fine-leaf thyme?
Excess leaves can be sun dried and stored in a sealed container, or you can make green seasoning and store same in the fridge.
There is also the coarse-leaf thyme which is a small fleshy bush, approximately 2 feet in height which is quite easy to grow.
