Root crops could be grown on ridges and packaged

Dear Editor,

Relatively high production costs for rice and sugar could eventually result in a sharp reduction in the amount of land under cultivation, and loss of generational farming skills. This development is typically accelerated when an economy is over stimulated by revenue from natural resources.

Agri processing offers a good opportunity to boost the internal economy by ensuring food availability and providing employment.

Food technology research can establish the potential to process root crops, and package for a nominal shelf life. Yams, tannias, sweet potatoes, etc, could be cultivated on ridges, furrow irrigated, and mechanically harvested.

Yours faithfully,

Patrick Scott
