There are chefs whose minds work in ways that astound. Their creations, and their approach to ingredients are a combination of artful expression, respect, and a dash of playfulness. It is what sets them apart from others. However, what I truly love and appreciate about these artists is their use of local ingredients and the ability to make food accessible in a way that home cooks and food enthusiasts, like myself, can feel confident enough to try making one of their dishes. That’s how I came to make this Sweet Plantain Fried Rice that I am sharing with you.
